Quinoa Tabbouleh

Just tried this healthy, new recipe today for "try something new" day for our September Selfie Contest!  If you've never made quinoa, mix the quinoa will a saucepan of water, bring to boil then let sit for 20-30 mins.

1 3/4 c. Water
1 c. Quinoa
1 Tbsp. olive oil
Lime juice
Dried cranberries
Red pepper
Onion
Tomato
Green onion
Cilantro
Cucumber
Salt
Pepper

 

Chop, mix and enjoy!
